Recipe of the Week: Curried Coconut Spinach

Ingredients 1 Tbsp of Coconut oil
1 med onion, diced
5 cloves garlic
½ to ¾ a can of Coconut Milk
2-4- tsps of your favorite Curry Paste
1 lg pkg of fresh spinach, chopped
Instructions:
  1. Saute onion and garlic in coconut oil until lightly browned.
  2. Add your Curry Paste and Coconut Milk, once simmering drop in your spinach and cook until nicely wilted.
